Ingredients:

4 chicken thighs, deboned and skin off

1 cup of Mango Chutney

1 cup yoghurt

Pinch curry powder

Brioche burger buns

Salt and pepper to taste

 

Instructions:

In a bowl, mix the Mango Chutney, yoghurt and curry powder

Place the chicken in the bowl and leave for half an hour to marinade

Grill the chicken over medium heat until fully cooked, about 6-7 minutes per side

Serve hot in brioche burger buns with a little more chutney.

500g shredded pork

Place two slices of bread, butter side down, on a hot skillet.

Spread the shredded cheese over the slices of bread.

Add a layer of Mango Chutney.

Top with the other two slices of bread, butter side up.

Cook until the bread is golden and the cheese has melted, about 3-4 minutes per side.

Cut in halves and serve hot.

Ingredients:

One red onion, diced

200g prawns

Handful rocket

Small tin sweetcorn

Instructions:

Fry off the prawns in a hot pan with some oil.

In a small jar, combine the Mango Chutney, lime juice, salt, black pepper, and Tajín

Put all the other ingredients in a bowl and pour over the vinaigrette. 

Mix thoroughly and top off with sesame seeds.
