Enter stage left Christopher Columbus who landed in the Americas in 1492. when chili peppers had already become a staple in the diets of Indigenous people. Columbus was searching for spices like black pepper, which at the time was an prized and extremely expensive commodity at the time. He mistakenly thought these plants were related and called them “peppers”, and off he trotted back to Europe.

Little did he know he had just started a gastronomic revolution…

Portuguese traders introduced them to Africa, the Brits to Asia and the Spanish to Latin America, where they were quickly embraced and incorporated into local cuisines. In India, chilies blended seamlessly into curries, enhancing flavours in ways that have become iconic today. Thai and Sichuan dishes found their signature heat with the addition of chilies, and African stews gained a fiery depth. In every region they touched, chili peppers transformed food culture.
